We spontaneously bought a waffle maker a few months ago, and when we got it home, I realized had no idea what I was doing. All I could remember about making waffles as a kid is they took forever. We had to separate the eggs, beat the eggs whites, fold in the eggs whites, and then let the batter sit. To much work! Who wants all that egg-y bru-ha-ha? 

The first recipe we tried in our new waffle maker was Belgian Waffles. Holy moly is there a lot of butter and sugar! There must be a way to make waffles healthier! There must be a way to make them more allergy friendly! Low and behold my most beloved recipe to date: vegan whole wheat waffles.

Bye Bye Sugar Hello Applesauce 

The reason I love vegan whole wheat waffles is they tick so many healthy and allergy friendly boxes. So many in fact, I had a hard time naming this recipe! Here were the options:

• Waffles for Two

Right! What to choose. What to choose!? Three ingredient sugar-free vegan whole wheat waffles doesn’t really work eh! In the end, vegan whole wheat waffles was the name that won. These waffles say bye bye to refined sugar, white flour, butter, and eggs and hello to whole wheat flour, coconut oil, and unsweetened applesauce!

Vegan whole wheat waffles are not overly sweet (sweetness depends on the applesauce you use), which means if you choose to top them with whip cream or syrup, it won’t feel like you are just eating sugar for breakfast. My favourite way to eat them is with greek yogurt and a drizzle of maple syrup. Since there is no other source of sugar in this recipe, you can fully experience the maple syrup flavour. And you won’t experience a sugar crash!

Grab your waffles irons, coconut oil, unsweetened applesauce, and whole wheat flour. Breakfast is served!

Ingredients

  • 60g Coconut Oil
  • 200g Unsweetened Applesauce
  • 120g Whole Wheat Flour

Instructions

  1. NOTE: This recipe makes 4 waffles (12cm x 12cm or 4,7″x4,7″) – the number of waffles and how much batter you use to make the waffle will vary depending on your waffle iron.
  2. Heat your waffle maker.
  3. Whisk together the coconut oil and applesauce. Try and get the mixture as smooth as possible. There will be small clumps of coconut oil.
  4. Using a spatula stir in flour – mix until everything is incorporated.
  5. Fill your waffle iron so that the dough is in the centre with a least a centimeter of space around the edge.
  6. Cook 4 minutes.
  7. Enjoy!

Notes

The number of waffles and how much batter you use to make the waffle will vary depending on your waffle iron.
